I was recently at a “Salad in a Jar” party. To start conversation, our host asked, “What does healthy mean to you?” There were about a dozen of us sitting around, each sharing a different take on what being “healthy” means to us. Not surprisingly, the common theme was eating well and exercise. Yet, all seemed to recognize how difficult it is to “fit in” the eating right part, or, acknowledged the difficulty in getting the large amount of fruits and veggies in each day that researchers say is required toward good health.
Personally, I’ve been inspired by many who have “kicked” their bad habits and improved their health. There’s Kathy who beat Type 2 Diabetes, Ivette who beat the negative symptoms of allergies, autoimmune disease and “leaky gut” syndrome, Jennifer who went from near zero to running her first half marathon. (And, she turned 40!) Then there’s me, having to leave my near 20 year career just over 4 1/2 years ago due to not 1 but 3 autoimmune diseases, “leaky gut” syndrome, a myriad of food allergies and chronic pain. Today, I am back to work with my own business, (co-owner with my husband), and manage my illness through proper diet, exercise and rest.
Researchers’ say there are four keys to healthfulness. Ask yourself the following questions:
For the women seated at the “Salad in a Jar” party, the most difficult of these 4 questions to achieve seemed to be getting the 5 servings of fruits and veggies each day. For me, that has been the most challenging as well. I have found resources to insure a greater intake of fruits and veggies daily and one of them is my morning smoothy. I’ve heard from so many that the morning “smoothy” routine has been the easiest and most beneficial toward their better health. So, consider your morning routine and think about having a “Salad” for breakfast! Here’s a recipe to get you started:
1 cup Organic Coconut Water
1/2 cup to 1 cup Kale
1/4 cup Fresh Parsley
1/8 cup organic celery
1 inch fresh Ginger (peeled or not)
2 -3 tbs. Golden Flaxseed
2 tsp. Ground Cinnamon
1 cup frozen Organic Blueberries
(Other choices to add/subtract include: organic apples, lemon, lime, organic strawberries)
Chop up what you can then place all in a Vitamix or Ninja to make your delicious Breakfast Salad into a Smoothie!
The Blueberries and Cinnamon help this smoothy to taste great all by itself. If you want to add some protein, consider Pea Protein. If you truly want more…you can add in something called “Complete” from Juice Plus+ as well as the capsules from JP that are packed with veggies and fruits.
(What is a Salad in a Jar Party? Well, the Host provides the Organic Spinach, Organic Kale and/or other Organic dark leafy greens and the guests provide the toppings. Everyone brings 4 to 5 mason jars of their own. You walk around the table creating your salads for the week. At the base of the jar you put the ingredients that you want on the “top” of your salad, typically the juicier items, the last thing you put in the jar are your greens. It’s a great way to share healthy lifestyle ideas with each other while you are saving yourself time and increasing your health for the coming week with great salads!”
